You know, sometimes we just need a little comfort food right? These are my go-to comfort cookies. Recently, I served my oatmeal cookies to my Bible Study gals and they loved them! One dear friend said it was the best oatmeal cookie she’s ever had! I’ve been making these for many years, since my kids were little! They’re definitely one of my favorites! It’s a delicious and sturdy cookie, perfect for picnics, porch sittin’, or an after school treat with a tall glass of ice cold milk. They’re crunchy around the edge and chewy in the middle. This recipe makes a big batch… enough to share with friends and neighbors!
- Aunt Ruthie’s Chewy Golden Oatmeal Cookie Recipe
(These cookies will bring a whole lot-a happy to your home!)
1 cup (2 sticks) softened butter (not melted)
1/2 cup sugar
1 cup packed brown sugar
2 Tablespoons vanilla (yes 2 Tablespoons! That’s the secret to these amazing cookies! You can do less if you want )
2 eggs
1 1/2 cups unbleached flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
3 cups old fashioned oats
1 1/2 cups coarsely chopped walnuts
Preheat oven to 350. (This is a stiff dough so I use my KitchenAid stand mixer)
- Cream together butter and sugars.
- Add vanilla and eggs.
- Stir in flour, baking soda, salt, cinnamon, mix well.
- Mix in the oats until well combined.
- Stir in the walnuts
Drop rounded tablespoons of dough onto an un-greased cookie sheet. Bake at 350 for 10-12 minutes. You want the edges to be slightly golden. Let the cookies rest on the sheet for one minute then transfer to a cooling rack. Enjoy!
*Feel free to add raisins, dried cranberries or chocolate chips.

2 “tablespoons” of vanilla…..or did you mean teaspoons?? That seems like a lot of vanilla??
